Thanksgiving Cooking

I hope you all had a nice Thanksgiving!  Here's a quick recap of our busy week, along with recipes for most of what we had for Thanksgiving.

Last week, I finalized our menu and shopped for ingredients, so I wouldn't have to brave the stores with other last-minute shoppers.

During the boys' sewing lesson on Tuesday, I made Mary's Awesome Pork dish with enough for leftovers so I wouldn't have to cook on Wednesday night.  After their class, we made two pumpkin pies, two maple pecan tarts in lieu of pecan pie, cranberry sauce, and a gelatin salad.

On Wednesday, we spent the day making turkey broth, stuffing/dressing, mashed potatoes, and sweet potatoes with a pistachio crust.  Thankfully, the boys did a great job helping this year: cleaning, washing, peeling, chopping, fetching (much better than last year!), mixing, stirring, loading and unloading the dishwasher and hand-washing dishes, rolling out pie crusts, measuring ingredients, and reading recipes.

All that was left for Thursday was roasting the bird, making gravy, and warming up dishes.

It seemed much easier to make Thanksgiving Dinner this year. In years past, I would need to send My Dearest out to the store on the Wednesday before Thanksgiving while I cooked and baked like a maniac because I had forgotten something or my new technique for some dish had failed.  I guess this is what happens after years of experience making Thanksgiving dinner.  This year on Thanksgiving Eve evening at 6:30, we were sitting down to eat dinner and had everything done. We spent the evening relaxing and catching up on some kdrama.  It doesn't matter that I had a stressful dream that night thinking that I had not prepared anything and nothing would be ready, does it?
